Cauliflower Crust Pizza - Gluten Free

Ingredients

For the cauliflower pizza base:

  • 1 Cauliflower or 500g cauliflower rice
  • 1 egg
  • 300g parmesan cheese
  • 1tsp salt

Pizza Toppings:

  • 1/2 cup sundried tomato
  • 4 strips bacon
  • 250g Burrata cheese
  • 1/2 onion
  • shredded parmesan
Step 1

Make the Cauliflower Pizza Base
Use a food processor to cut up the cauliflower into tiny pieces no bigger than rice. Pour the cauliflower bits into a bowl and add the egg. Mix well and add salt and the cheese, if you want it. The cheese gives the crust an extra flavour and keeps the crust together.

Step 2

Preheat the Otto Wilde Grill

Preheat the grill at the highest temperature for 3 minutes. While you preheat your Otto Grill, place the crust on Otto’s pizza stone. Grease it up with a bit of coconut or other oil. Then, use your hands to press the cauliflower mixture onto the pizza stone. Press it out evenly but thinly – about 1 cm thick.

 

Step 3

Grill the Cauliflower Pizzabase

Lower the temp to the middle (between big and little flame). Then, add the cauliflower pizzabase and grill for 5-10 minutes. Watch it and when the edges start to become dry, it’s ready to be taken out.

Step 4

Caramelise the onions

While the base precooks and bacon grills, make the caramelised onions. Take the thinly sliced onion halves and add a tablespoon on coconut oil. Cook at a medium heat until translucent and then, turn down the heat to low and simmer until caramelised.

Step 5

Grill the bacon

When the grill has preheated, grill up the bacon. Place the strips on the grill grate and use the highest temperature at the highest level. The bacon only needs 1 minute each side, so watch it carefully. Set this aside for finishing the cauliflower pizza.

 

Step 6

Add toppings

Add all the toppings! We used a sundried tomato base but you can use a regular tomato sauce from any supermarket. Add slices of burrata evenly. Do not add the caramelised onions or arugula until the end with the bacon

Step 7

Grill your pizza!

Now grill the pizza on the Otto Grill again at the same heat as the precook. Use a medium height until the cheese is fully melted. Finally, add the caramelised onions, fresh arugula and bacon cut up into bits. Serve and enjoy!
