First, slice the zucchini. The thickness is up to your preference but we prefer thin slices. To thinly slice the zucchini with a knife could take some time but if you have a sturdy, pure oak cutting board, the slicing should be easier. A mandolin could also be a handy tool to thinly slice the vegetable.
Otto likes to dress the grilled zucchini salad with a bit of spice. If spicey just isn’t for you, skip the chili or substitute it for something mild like paprika. First things first: prep the ingredients. Chop the garlic, parsley and chili into small pieces. Combine all the ingredients in a small bowl with olive oil. Season to taste with salt and freshly ground black pepper.
First, take out the grill grate so that it stays cool. Next, preheat your Otto Grill to the full temperature of 800°C. This will only take 3 minutes! Place the zucchini slices on the cool grill grate and grill them at the lowest height, Meat-O-Meter level 5, for 1-2 minutes on each side. Repeat until all zucchini slices are grilled. They should be a bit translucent and very flexible.
Place the grilled zucchini slices into a bowl, add the dressing and mix well. You can serve this salad warm or place it in the fridge to serve as a cold side dish. Enjoy!
