In this gourmet pizza recipe, Otto combines the Italian classic with a griller's favourite thing. A crispy, fluffy, perfect pizza dough covered with authentic Italian pizza sauce and gourmet toppings is refined with a grilled surprise: thin slices of skirt steak. Steak plus pizza is the combination for top-class grillers.
Ingredients
Pizza Dough
  • 2 1/2 cups water
  • 2 1/2 tsp yeast
  • 1/4 cup olive oil
  • 2 tsp sugar
  • 8 cups flour
  • pinch of salt

 

Serves 4

Italian Pizza Sauce

  • 1 tin of diced tomatoes
  • 1 tbs chopped basil leaves
  • 1 tbs chopped oregano leaves (or dried)
  • 3 cloves garlic, very finely diced
  • 1 onion, finely diced
  • 1-2 bay leaves
  • 2 tbs olive oil
  • salt & pepper to taste

Steak Pizza Topping

  • 3 red onions
  • 2 red bell peppers
  • handful of black olives
  • rocket leaves
  • Shaved parmesan cheese
  • salt & pepper to taste
Step 1

How to make pizza dough at home

Stir the yeast into 1 cup of the water and ½ cup of the flour and let the pre-ferment rest covered for 15 minutes.

In the meantime, mix the rest of the flour well with the sugar in a large bowl. Once the pre-ferment has finished resting, add it to the sugar-flour mix. Use dough hooks or your hands to knead the mixture to a nice, smooth dough.

Add the rest of the water and work it into the dough as well. As soon as about ¾ of the liquid is incorporated, add the salt and olive oil little by little. It’s important not to add more liquid until the remaining liquid has been completely absorbed by the dough. This way, the pizza dough will end up smooth and not too sticky.

To finish, shape the dough into a sphere, place it in the bowl and cover it with a clean dish towel. Let the homemade dough proof for 2.5-3 hours until it has approximately doubled in volume.

Step 2

Italian pizza sauce recipe

Dice the onions and fry them with a bit of olive oil in a pan until they are glossy. Then add the diced garlic and toast it lightly without letting it turn brown. Add the canned tomatoes to the pan. Also add the pizza sauce seasoning: basil, oregano and bay leaves. Let the sauce boil lightly for 30 minutes. Add salt and pepper to taste and that’s it!

Step 3

Prepare the BBQ pizza toppings

Half the olives. Cut the red onions and the bell peppers into thin slices.

Step 4

Portion the homemade pizza dough

Once the homemade dough has risen, take it out of the bowl, split it into 5 equal portions and shape these into small balls. Cover them with the towel once more and let the dough rest for another 30 minutes.

Step 5

Grill the steak medium rare

We’re using a skirt steak, but you can use any other steak instead. Preferably the meat should have a high fat content, so that it’s not too dry on the pizza. A filet for example would be too lean in Otto’s opinion.

Preheat the Otto Grill onto 800°C for three minutes. Put the meat on the grate and grill it on each side for a maximum of one minute and thirty seconds. The meat will be grilled again on the pizza, so it should be medium rare. Take off the medium rare steak from the grill and cut it into thin slices.

Step 6

Making pizza on the grill

Transform your 800°C Steak Grill to a gas grill pizza oven using Otto’s Pizza Set. Put Otto’s Pizza Stone on the 800°C  Steak Grill and preheat it at maximum temperature for 5 minutes, so that the pizza stone reaches a temperature of about 400°C. Avoid heating it up any longer than that, because otherwise you risk a heat congestion under the burners. For the Steak Pizza, roll out the dough balls on a well-floured surface, until they reach a diameter of about 25cm. Then pre-bake the homemade pizza base without any toppings on your outdoor pizza grill on low heat for about 1 minute. This way, the crust becomes nice and crispy.

Step 7

Grill the steak pizza

Cover the pre-baked pizza base with the homemade Italian tomato sauce and add the red onion, bell pepper and olives to your liking. If you’d like, you can also cover the pizza with some cheese. However, to really have the full effect of the meat aroma, Otto recommends using little or no cheese.

Distribute the steak slices equally on the grilled pizza and use Otto’s Pizza Peel to slide the pizza back onto the preheated pizza stone. Put the burners to medium level and bake the Steak Pizza for 1-2 minutes on Meat-o-Meter level 5.

Step 8

Serve & enjoy!

Take the finished Steak Pizza out of the Otto grill and refine it with some rocket and grated parmesan. Season the pizza with pizza seasoning, salt and pepper to taste. Then it’s ready – your Steak Pizza with grilled gourmet pizza toppings!
