Spicy Grilled Chicken Breast

Grilled chicken breast is a dinner go-to but isn't always easy to perfect. The secret is in the marinade! This chicken stays incredibly moist and tender on the inside with delectable, crispy skin on the outside. It's so good, you might consider it your favorite meat: what a feast!

  • 4 chicken breast fillets
  • 4 garlic cloves
  • 1 red chilli
  • 3 Tbsp freshly chopped rosemary
  • 1 lemon
  • 6 Tbsp olive oil
  • 1 Tsp coarse sea salt
  • Freshly ground pepper

 

 

     

    Prep your equipment

    Other than a perfectly grilled steak, the Otto Grill whips up crispy seared chicken skin with tender meat in this spicy grilled chicken breast recipe. Try it out, don’t dry it out! The Otto Grill never dries meat, especially chicken. You won’t have to cook this for too long. Cooking time is under 5 minutes! Just marinade the night before, heat up the grill and you’ll be enjoying this tender chicken breast in no time.

    Step 1

    Prepare the chicken marinade

    To create a juicy, spicy grilled chicken breast, you first have to prepare the tasty marinade. First, remove the rosemary from the branches and the seeds from the chili. Then, peel the garlic.

    Step 2

    Chop dry ingredients

    Chop all the ingredients with a large knife and put them into a bowl.

    Step 3

    Add wet ingredients

    Nest, squeeze lemon juice into the bowl. Add olive oil, salt and honey and mix all ingredients well until the honey has dissolved.

    Step 4

    Season the Marinade

    Season to taste with salt and pepper.

    Step 5

    Prepare the Chicken Breast

    Dab dry the chicken breast fillets with a kitchen towel and put them in the bowl with the marinade.

    Step 6

    Let Chicken set in Marinade

    Cover the bowl with plastic wrap and let the chicken breast marinate in the fridge over night. Alternatively, you can vacuum-seal the marinated chicken breast fillets – this way, you’ll marinate the chicken breast fillets faster and create even more intense flavors.

    Step 7

    Perfect Crust on the 800°C Otto Grill

    Remove the chicken breast from the marinade and drain. In the meantime, preheat your Otto Grill to full temperature (1500°F) for 5 minutes. Place the chicken breast fillets on the cool grill grate, adjust the height to Meat-O-Meter level 1-2 and grill them for 20 seconds on each side to sear a crispy crust.

    Step 8

    Cook Chicken on low temp

    Now, lower the height of the grill grate to medium level (Meat-O-Meter: 3-4), adjust the temperature to the lowest level and let the chicken fillets cook for around 2 minutes on each side until they have reached your desired cooking level.
