Classic French Onion Soup

There are few things more comforting than a hot bowl of savoury gratinated french onion soup with grilled Guyere cheese! We tried cooking this on the Otto Grill and are blown away by the results! Try this and add another staple dish to your winter recipe list. Healthy, hot and humongously delicious!

Ingredients

For the soup:

  • 225g Onions
  • 2 Garlic cloves
  • 1 tbsp all-purpose flour
  • 740ml beef stock
  • 85ml white wine
  • 2 Bay leaves
  • 2 Thyme branches
  • 115g grated gruyere cheese
  • butter
  • salt & pepper
  • muscat
  • 1 baguette
Step 1

Slice the onions
What more do you need for a classic french onion soup than anything else? Right: lots of onions! Peel your onions and cut in halves. Proceed to cut halves into thin slices of equal thickness. Dice garlic cloves and put aside with other ingredients for now.

Step 2

Prepare other ingredients
Now slice your baguette into half inch-1inch thick slices. Grate the gruyere cheese with a cheese grater, transfer to a bowl and put aside.

Step 3

Cook the homemade onion soup

Melt butter in a pot over medium heat. Add sliced onions and stir fry for about 20 minutes until onions turn light brown. Be careful to not overheat and burn! Now add your diced garlic and fry for 2 more minutes. Increase temperature to high, wait for a minute while stirring and add white wine. Bring to a quick boil. Now add your thyme, bay leaves and beef stock stirring gently. Add salt and pepper, simmering for 20 minutes.

Step 4

Heat up your Otto Grill

Heat up your Otto Grill on max temperature for 3 - 4 minutes and bring your grill grate to meat-o-meter level 3.

Step 5

Time to grill up some soup

Pour the homemade onion soup into heat resistant ceramic moulds. We recommend mould large enough to hold around 285g of soup with some head space for bread and cheese. Top up with 1-2 slices of the baguette, then put a layer of the grated gruyere cheese on top - add as much cheese as you like!

Then carefully place the moulds that have been filled with soup, baguette and cheese on your Otto Grill Grate and into the grill on Meat-o-Meter level 5 (low). Reduce heat to medium and watch the cheese melt and form a delicious golden brown crust within just a few minutes. Take your classic french onion soup out and enjoy while hot!
